$15 for $30 Worth of Pizza, Italian Food, and Drinks

Classic margherita pies ($15.25 for a 16 in.) combine basil, tomato sauce, and mozzarella into gooey meals, and white pizzas ($19.25 for a 16 in.) buoy a spread of fresh ricotta, shaved parmigiano, and cracked black pepper. Diners can also fill up with italian club paninis ($8.95) and cap off meals with dessert pizzas ($4.95), whose Nutella and roasted banana can be topped with gelato for an additional $1.50. When Daniel Simon flew to Florida a few years ago, he had a single purpose: to taste coal-fired pizza. He’d been sent on this mission by his brother-in-law Sean Dollinger, who hadn’t stopped raving about the pizza since he’d swooned at his first bite of it and learned about how eco-friendly baking with anthracite coal was. After his own taste of a coal-fired pie, Daniel was hooked too. The brothers-in-law then took to the streets and hunted down the perfect chef to help them in their budding restaurant venture. Eventually they found second-generation Italian Joe Paletta, and soon, the trio was brainstorming a menu, seeking inspiration from fresh ingredients and clouds shaped like pepperoni. They dreamt up from-scratch dough, crafted with organic flour from the prairies of Alberta, and housemade sauce comprised of Italian san marzano tomatoes.

After tasting what they’d created, they knew they were ready. They opened Carbone Coal-Fired Pizza, where an 850-degree anthracite-coal-burning oven reigns unrivaled by a stovetop or fryer, birthing the restaurant’s signature pizzas, toasting its paninis, and baking its chicken wings. Goat cheese, calabrese salami, and fresh ricotta top the pies, and salads and sandwiches rely on fresh ingredients—the freezer’s sole role is to keep the gelato and diners’ snowballs chilled.

Guests can see all of this for themselves as they gaze into the open-air kitchen from Carbone’s brick-walled dining room. After watching feasts make their ways to tables, guests can order libations from Carbone’s encyclopedic drink list. There, detailed wine descriptions remind sippers to taste for the notes of black raspberry in a Sicilian red or appreciate the crisp finish in an Australian chardonnay.
